Roasted Organic Grass-fed Scottish Forerib of Beef, & its juices (see below for pictures & videos of the process..)

(the beef will be cooked the day before to an internal temperature of 45 degrees celsius, & then immediately wrapped in 20 layers of non-porous film touching the beef without the roasting dish underneath (!) the moment the beef leaves the oven to preserve the moisture & promote tenderness, & will be left out of the fridge, ambient, for 24 hours before serving)
